Prep Time: 15-20 Min. | Bake Time 18-60 Min. | Makes 18 muffins or 1 loaf

Preheat oven to 350° Cream butter and agave Add eggs and mashed bananas and combine well Sift flour, baking soda and salt. Add to creamed mixture. Add vanilla, chocolate chips and walnuts and fold into batter thoroughly. Spray baking pans with Bakers Joy spray. Either loaf or muffin pans. (If making in muffin pans, you can use paper baking cups instead.) ¾ Stick of Plant Based Butter (I like Olive Oil based butter. Soften at room temperature.) 2/3 Cup of Agave (I like Madhava Organic Amber Agave but any other will do) 2 Large Eggs 4 Ripe Bananas, mashed 1 ½ Cups of Whole Wheat Flour (I use King Arthur Whole Wheat Flour) ½ - ¾ Cup of Mini Chocolate Chips Ingredients Preparation

¾ Cup of Walnuts (optional) 1 Teaspoon Baking Soda ½ Teaspoon Kosher Salt ½ Teaspoon Vanilla Extract

Bakers Joy Baking Spray with Flour (Use instead of greasing & flouring pans. Tastes better and less messy.)

Pour batter into loaf pan and shake out any air bubbles. If using muffin pans, pour ¼ cup of batter into each well which should be approximately ¾ filled. Bake as follows: (may vary depending on your oven) Loaf pan – 60 mins Muffin pan – 18-20 mins Remove and cool. Keeps well refrigerated.
