Cassandra Skevis | Fort Lauderdale Feta Crusted Salmon

4 Salmon Fillets ½ cup crumbled feta 1 medium tomato, diced ¼ red onion, diced 4 kalamata olives, sliced Juice of ½ lemon ¼ cup olive oil Dash of dried basil Dash of salt and pepper Ingredients

Preparation

Preheat oven to 350F Coat bottom of baking dish with olive oil, then place salmon skin side down in dish. Drizzle fillets with olive oil, then season lightly with salt and pepper. Top fillets with crumbled feta, chopped tomatoes, chopped red onion, and sliced kalamata olives. Squeeze lemon on fillets, then finish with a dash of basil. Bake for about 20 minutes, until salmon flakes easily with a fork.
