Heather McFee | Tampa Family Favorite Broccoli Casserole

Ingredients

You’ll need a 9x12 pan to start. Cook the broccoli according to directions and drain. I just microwave it. Add your chopped onion, soup, mayo and beaten eggs and mix together with a spoon. A whisk won’t work properly, all the goodies get trapped inside the whisk. Layer your broccoli, then a layer of the soup and mayo mix, a layer of cheese and repeat. Your last layer should be the cheese. 2 bags of frozen broccoli (16 oz bags) 2 cups sharp cheddar cheese or more if you like, nobody will judge you 3 eggs - beaten 1 small to medium size yellow or Spanish onion – diced finely. Do not use a red onion. 1 stick butter – melted and slightly cooled ½ cup mayo Preparation

1 regular size bag of the Pepperidge Farm Stuffing mix. Your flavor choice. 1 can of cream of mushroom, chicken, or onion soup. I use the chicken.

Pour your stuffing mix over the top to cover the last layer of cheese completely. Pour your melted butter over the top of the stuffing mix. Cook for 30 minutes at 350 or until broccoli and onions are tender. Grab a fork and dig in! Goes well with turkey, chicken and ham or a big crusty roll!
